The vines are over 40 years old and are irregularly planted in goblets. The vineyard is certified in the CCPAE as ecological viticulture. Production is very low: 3,500 kg per hectare. Manual harvest and first selection of the best bunches on the vine. In the winery, a second selection is made on the table, using exclusively the flower must for the vinification of this wine. After protecting the grapes by cooling them to 14ºC, a static racking is carried out for 36 hours, then the new 300-liter French Allier oak barrels with fine grain and medium toasting are filled, where the wine undergoes fermentation at 16º and the subsequent aging with its lees.
