The current winery of the Príncipe family dates from the mid-late 90s when they took the step of transforming the traditional winery for making rosés for bulk sale and the family catering business into a winery focused on bottled wines. Coincides all of this with the expansion of the vineyards – of which up to 23 hectares were planted between 1991 and 1992 – and with the desire to make a significant qualitative leap while maintaining adjusted production volumes. In 2000, with the elaboration of the first César Príncipe red wine, the evolutionary cycle led since 1982 by Ignacio Príncipe, the only one of the several sons of César involved in the winery, culminated. that those producers from Cigales traveled (very few at the time) who were committed to competing without complexes in the field of great red wines.
