On the slopes of Montserrat at 500 meters of altitude we have in "Can Aguilera" 5 hectares of authentic terroir of licorella with continental climate. The location of this vineyard favors the harvest at the end of September with great thermal contrasts between day and night temperatures, which favors the terpene maturity of this Sauvignon blanc whose production does not exceed 4,000 kg per hectare. The harvest was carried out by hand, exhaustively selecting only the best bunches of the vineyard. A second selection of the clusters is carried out in the winery by the technical team at the selection table. Using exclusively the flower must for the vinification of this wine. After performing a static racking, the 100% new 300-liter Allier French oak barrels (fine grain and medium toast) are filled for 3 weeks where the wine undergoes fermentation at 16o/17o and is subsequently aged on its own lees with battonage for 3 months. It is then that the coupage of the different barrels is carefully elaborated and the wine is bottled and it is in the bottle that it finishes rounding off to offer us its maximum splendor.
