Laderas del Portillo 2006

Grapes from our plot located in the term of "Portillo" with an altitude of 620 m. Clay-calcareous soil whose subsoil is formed by several layers of white rock. Uneven terrain with a slope facing south and protected by small peaks that surround it. Selection in the vineyard only the best grapes reach the winery. Light destemming to avoid damaging the grain. Cold pre-fermentation maceration. Alcoholic fermentation in small-capacity wooden vats for 16 days at a maximum temperature of 27º. Pumping over and punching down according to fermentation time .Malolactic in new French oak barrels from six famous coopers (Taransaud Sylvain Millets Darnajou Francois Freres Seguin Moreau). (2 of 500 l and 4 of 225 l) 12 months of permanence in barrel. The wine has not undergone any stabilization or filtration process.
